What was on the menu for an evening all about nutritious food? A meal of Avocado Vichyssoise and vegan Carrot Osso Buco, all made from ingredients sourced within 100 miles of Los Angeles.

Blackberry Cashew Cheesecake Bars

Makes 1 8×8 pan

Recipe from Dani Nemeh



Vegan Cheesecake Filling:

  • 1 ½ cup soaked raw cashews (3 hrs)
  • ⅓ cup pure maple syrup
  • ⅓ cup coconut oil
  • ½ cup blackberries
  • 1 tablespoons vanilla extract
  • Juice from one lemon


  1. Soak cashews for 3 hours
  2. Make crust: Give it a whirl in your blender. spread and press firmly down in an 8X8 pan covered in parchment paper.
  3. Make filling: Blend it all up until smooth. pour cheesecake mix over crust place in the freezer.

Blueberry Granola Crisp

Makes 1 baking dish



  • 3 cups blueberries, fresh or frozen
  • 3 teaspoons cinnamon
  • ½ cup coconut sugar
  • 2 tablespoons arrowroot powder
  • ½ lemon, juiced


For serving:

  • Non-dairy ice cream


  1. Preheat oven to 350°F.
  2. Make filing: In a large bowl, toss blueberries with the sugar, lemon juice, cinnamon and arrowroot, then spread in a baking dish.
  3. Make topping: In a small bowl, combine granola with the coconut oil or vegan butter.
  4. Sprinkle topping onto the filling.
  5. Bake for 20 minutes, or until topping is golden and filling is bubbling.
  6. Serve with non-dairy ice cream.
